A Restaurant Is Not a Machine

We should say this plainly at the start, because it will save some people the trouble of reading further: Hermitage is not a business you can switch on and walk away from.

If what you're looking for is something that runs quietly in the background while you do other things - a signboard, a logo, a stream of income you never have to touch, this isn't it. We'd genuinely rather tell you now than three months in.

Because a restaurant is a living thing. It has good days and off days. It can feel warm and full one evening and strangely flat the next, and the difference is almost never the menu. It's whether someone was there - noticing. A dining room needs to be read the way you read a person's mood. The table that's been waiting too long. The regular who came in looking tired. The dish that left the kitchen a shade less beautiful than it should have. None of that shows up in a report. You feel it, or you miss it.

The people who do well with a place like this are the ones who can't help but feel it.

Who we're actually looking for

Here's the part that surprises people: we are not looking for restaurant veterans.

Some of the best hosts we know have never run a restaurant in their lives. What they have instead is harder to teach - they care about how a room feels. They notice things. They take it personally, in the good way, when a guest leaves anything but happy.

So this is written especially for two kinds of people.

The first-time restaurateur; someone who has wanted to run a place of their own for years, who has quietly imagined it, and who has been held back mostly by not knowing where to begin. You don't need to have done this before. You need to be willing to be in it, daily, learning.

And the family looking to build something together, a business that belongs to all of you, that outlasts any one person, that a son or daughter can grow into. Restaurants have always been a family's kind of business. The instinct to feed people well, to make a room feel like home, to show up every single day, that tends to live in families already.

You won't be doing this alone

The reason we can invite first-timers with a straight face is that we don't hand you a brand and wish you luck.

Everything we've learned building Hermitage - how the kitchen runs, how the floor moves, how a guest is greeted, how the numbers are kept honest, how a bad evening is turned around - all of it becomes yours. Full training before you open. Detailed SOPs for the parts that must never drift. And a real person from our side beside you through the opening months, not a helpline, not a manual gathering dust in a drawer.

We hand-hold, and we mean it. Not because we think you're incapable - because we know exactly how hard the first year is, and we would rather build it with you than watch you struggle through it.

Your job is to bring the care. We'll bring everything that can be taught.

Only a few, and only three neighborhoods

We're opening a small number of partner outlets. Deliberately small. This is not a race to plant flags across the map.

Every place that carries the Hermitage name has to feel like Hermitage - the same warmth, the same standards, the same sense that someone who loves it is standing in it. That only works if we grow slowly, choose carefully, and know each partner personally. A brand is easy to copy. A room full of people who feel at home in it is not - and that's the part we're protecting.

For now, we're opening the conversation in three areas of Bangalore only:

  • Whitefield

  • Jayanagar

  • HSR Layout

If you live in or know one of these neighborhoods well - even better. The best partner for a place is often someone who already understands the people who'll walk through the door.
